Enzymes

  • pH: before pitching, adjust the wash to 4.55.5 using citric acid (to lower) or calcium carbonate (to raise). Below 4.0 stalls; above 6.0 invites bacteria.
  • DAP: diammonium phosphate provides nitrogen. Sugar/molasses washes are nitrogen-starved and need ~0.5 g/L; grain washes already carry nitrogen so half that is plenty.
  • Yeast nutrient: a complex blend (e.g. Fermaid-O, boiled yeast hulls) at ~0.3 g/L covers vitamins, sterols and micro-nutrients.
